Series 7, Episode 8, Jumbles

I made these a couple of months ago and forgot nearly everything about them. Let’s see how I get on.

I couldn’t find all of the spices needed for this so needed to do some substitutions. Instead of caraway seeds, anise and mace, I used fennel and nutmeg.

I don’t remember making the dough, that probably means it was easy.

The recipe doesn’t give instructions for making the Celtic knots so I had to do some research online. First I rolled the dough into a long sausage shape, then placed on the worksurface into the shape of a U. Then I brought the top of the left side of the U down to make a loop:

Next, I brought the right side down to meet the other end:

I then pressed it together and defined the shape, before laying a circle of dough on top:

For the other type I just made some double knots:

Here they are all cooked:

They weren’t very biscuity, they were more like a rock cake. I think they maybe needed a few more spices to give it a more interesting flavour but overall they were fine with a subtle lemon flavour.
