Series 7, Episode 6, Fresh Herb Fougasse

When this episode was first on TV, I decided that I wanted to make fougasse, so I did. This was the third time I’ve made this recipe but there was a long time between two and three. Here’s the recipe: https://www.bbc.co.uk/food/recipes/fresh_herb_fougasse_70351

For this recipe I needed fresh sage, rosemary and thyme, but for some reason I couldn’t find any sage in the 3 supermarkets I looked in. Does anyone know where I can get some for the future? I could use some sage advice. I made the dough using my mixer but I think there was too much water, it was very sticky. Here it is:

I hoped that it would be a bit less sticky after proving, but no luck:

I struggled to shape the dough because of the stickiness – maybe I should have added more flour when shaping or less water when mixing, I’m not a bread expert but if you are then please feel free to give me some tips. Here’s my beautiful leaf:

I did make two, the second looked about as good as this one.

I baked it for the 20 minutes, then gave it about another 5 because it wasn’t fully cooked. Here’s the end result:

I had some fresh from the oven with some homemade tzatziki (I know I’m mixing cuisines here) and some garlic butter. It tasted pretty good but was a bit dense, I think my yeast was past its best as there weren’t many air bubbles. I will make sure to get some fresh the next time I make bread. The fougasse didn’t keep well for the next day, I’d say it’s definitely an eat on the day bread – it took me around 2 and a half hours to make so easy enough to make in the morning for lunch.
