Series 6, Episode 2, Arlettes
I was feeling greedy when planning to make arlettes so decided these ones would just be for Chris and me. Here’s the recipe: https://www.bbc.co.uk/food/recipes/arlettes_17164
The ingredients are pretty basic for this recipe, so no need to go hunting for obscure ingredients like for some of these recipes.
You first need to make two doughs – one is mainly butter. You then wrap the less buttery layer in the more buttery layer and treat like a puff pastry with book turns and chilling between folds. Here’s my buttery dough with my less buttery dough sitting on top:
Before the last book turn you need to add a cinnamon and sugar mixture, then roll it up like a swiss roll. Here’s mine:
The ends aren’t quite straight and to make these biscuits uniform and pretty, you should really cut off the end. I felt like this would be a bit of a waste though so didn’t bother. Here are my arlettes all squished together on a baking tray ready to go into the oven:
I felt that I could have made them a bit thinner, but didn’t want to run out of space to bake them. I think I baked them for a little bit longer than the recipe said, maybe I had made them too thick after all. Here they are all finished:
Some of them have a little tail and they don’t look the neatest but they tasted so good, all buttery and crisp. We had them hot with ice cream and on their own. They lasted a couple of days and we heated them in the microwave for a few seconds and they still tasted good, though were better fresh.
These took a long time to make but didn’t require much effort, it was a lot of waiting around while they were in the fridge. I’d like to try making these with ready made pastry to save some time and to see if they are as good. If you want me to tell you when I try this then let me know.
