Series 7, Episode 3, Dampfnudel
This is another one of those bakes where I have no idea what it’s supposed to look or taste like, so I have no idea how well I did. Maybe you can judge me.

The dough for this was quite an easy dough to work with, it wasn’t too sticky. Here’s a before proving photo:
I forgot to take a photo after proving but just imagine that but a bit bigger. Usually it’s satisfying knocking the dough back after proving, but I felt like there wasn’t a lot of air in this one. I don’t know whether it’s because the yeast was at the end of its shelf-life (but still in date), or whether that’s just what happens with a sweet dough.
The plum and vanilla sauces were pretty easy to make, the vanilla sauce was pretty much just a custard so I’ve made that a few times before. There wasn’t a lot of it though, considering this was supposed to be enough for 12 rolls. Here’s the vanilla sauce:
You’ll have to just trust me that that’s an average sized mixing bowl and that there’s not a lot there, definitely not enough for the volume it shows in the photo on the recipe!
After the dough had risen I divided it into 12 and put it in the pouching liquid, here it is:

I added a little bit more milk to stop them from burning and they had a nice golden bottom, as they should have. I wasn’t sure they were actually cooked so I had to sample a bit from the top of one of them to confirm.
Here’s one upside down with both of the sauces:
They had a hot cross bun vibe but were a bit more dense. The plum sauce was quite tart (I don’t think the plums were ripe enough), but I think it worked. I think they would have also been good warm with ice cream and some sort of jam, but I didn’t try that this time. They were fine to have the next day, I just warmed everything up in the microwave.
They tasted pretty good, a really filling dessert, good for a winter evening. I’d make them again if someone wanted me to, I just probably wouldn’t bother making the sauces myself.
